No-Bake Baked Macaroni Recipe + Luminarc Smart Cuisine Giveaway

'Tis the season to spend extra time with all those you love.

Took some time away from social media and went to Balanga (my hometown) to spend Christmas with my fambam.



Checked all the imaginary boxes for the high expectations that I have...

I didn't yell, played with my kids and pamangkins, and made a decent dinner for Noche Buena. 😝  A Christmas tree-shaped cheese platter and the No-Bake Baked Macaroni! Umm... confused? lol Me too! It's not actually baked mac, because it's not baked in an oven, BUT it tastes almost the same! Super yummy, creamy and meaty, just like what my kids said. And kids don't lie, right? haha

It's nice to be able to cook for them, take them out for a movie/milk tea date and treat them for a fun night out. Here are the ingredients:


canola oil
1/2 kilo ground beef/pork
6 pieces hotdogs, sausages or any meat that you like to add, sliced diagonally
4 garlic cloves, crushed and chopped
1 large onion, chopped
1 cup mushrooms, sliced
400 grams elbow macaroni, cooked
1 pack/ 1kg El Real sweet style spaghetti sauce
1 beef cube
salt and pepper, to taste

For white sauce:
2 tbsp butter
2 tbsp flour
2 packs All-purpose cream
1 can evaporated milk
1 large pack quick melt/DANES cheddar/mozzarella cheese

Instructions:

Cook the elbow macaroni in a pot full of boiling water until it's al dente. Remove excess water using a strainer and run under tap. Then set aside.
In a large pan, you can either let the ground beef boil in a cup of water then put the butter and sauté with garlic and onions, or you can saute garlic and onions in medium heat before adding the beef. It's your choice, besh! lol Then just keep stirring for a few minutes until it changes color.
Add the hotdogs and sausages as well as the mushrooms.
Put the beef cube.
Add the spaghetti sauce.
Add a dash of salt and pepper to your liking.
Remove pan from heat and mix sauce with the pasta in a large baking dish. Set aside.

For the white/cheese sauce:

Melt the butter, then add flour.
Put the whole pack of quick melt cheese and the remaining milk in a pan over low heat to ensure that the cheese doesn't burn.
Stir until the mixture is thick.
Pour cheese sauce all over the macaroni with red sauce mixture.

I rocked all the Christmas-y things this week, but the truth is, as a whole, I feel like I've been failing pretty hard. I've had a hard time putting the stress away and adapting to changes. My temper has been short and my patience stretched thin. That to me, are just a few struggles in motherhood.

Nafeel nyo na ba yun? When people ignore your efforts, you feel so tired and then still needing to give your all for others. Sometimes pa, the people you're expecting to make you happy are the ones that make you sad and hurt you the most. 😞 Nakakasad lang. But as always, I'm hoping for brighter and happier days to come. 😊

So I'm just here... smiling 😊 and trying to accept the reality that I won't always be at my best, but it doesn't mean that it's not enough.

I just have to get my mind and my heart in the right place. ❤ I am enough, and so are you.
